The FOGACCI® vapor control® pots are ideal for preparing your own homemade jams, marmalades, compotes and preserves. This is because they are kept at a constant heat, and so there’s no risk they’ll stick or burn during cooking.

A double wall that guarantees better control of heat and steam

The special double-walled 18/10 stainless steel structure forms a special steam-forming cavity. When a FOGACCI® vapor control® pot is put on the stove, the water inside begins to heat up to its boiling point. A valve then controls the intensity of the steam released, guaranteeing a constant temperature that never exceeds 105°C. This prevents direct contact of the fruit with the heat source, and maintains the ideal cooking temperature so that the ingredients will never burn.

The FOGACCI® vapor control® cooking system maintains all the aroma, flavour and nutritional qualities of fruit, and any other food as well.

When the FOGACCI® vapor control® pot is placed on a lit cooktop, the water in the cavity heats up, starts boiling and produces steam. A valve then controls the intensity of the steam and guarantees a strictly constant temperature that never exceeds 105° C.

FOGACCI® vapor control® allows food to cook without being in direct contact with the flame or hotplate, but purely with the gentle indirect heat of steam at a constant temperature never exceeding 105°C, and, therefore, ideal for cooking any kind of food without having to stir constantly or worry about sticking or burning.
